Our Fish Tikka is a headline act on Jaipur India Cuisine's live tandoor BBQ nights in Cochrane - fresh fish marinated in yogurt, ajwain (carom), and warm tandoori spices, then flame-grilled on skewers for a smoky, tender bite.
We marinate our fish twice - first with lemon, ginger-garlic and ajwain to season the flesh, then in a yogurt-based tandoori marinade with Kashmiri chilli, garam masala and mustard oil. The skewers go into the clay tandoor where high heat locks in moisture and adds that signature smoky crust.
